Coconut Milk Ice Cream

School may be back in session, but it’s Labor Day weekend. Here is a refreshing, healthier way to enjoy ice cream without dairy, with very little sugar and with only 100 calories per serving! This recipe comes to me from my sister with a few little added bonuses from my mom and, of course, my twist. I love how Family Recipes are born!

Chocolate

Ingredients:
3/4 cup raw cacao (unsweetened cocoa powder will work too)
1/4 cup raw coconut sugar, blended into powder if you have the crystals
(white sugar will work too)
3 Tablespoons brown sugar
A pinch of salt
1 can coconut milk and enough coconut milk (from the carton) to add up to a total of
3 1/4 cups
1 Tablespoon vanilla extract

Try adding a few mini-chocolate chips, gluten free cookie pieces or 1 teaspoon of mint extract for a little variety. Keep in mind these will change the calorie count.

Directions:
Mix everything together and pour into your ice cream maker.
Put 6 ice cream bowls in the freezer to cool.
When it’s done, divide into six servings, in your bowls and enjoy.
Mocha

Ingredients:
3/4 cup raw cacao (unsweetened cocoa powder will work too)

1/2 cup brown brown sugar
3 packets of Starbucks Via instant coffee (or pick one that you like)
Remember to use decaf if you’ll be eating this at night

3 1/4 cups
1 Tablespoon vanilla extract

Directions:
Mix everything together and pour into your ice cream maker.
