Flour-less Quinoa Chocolate Cake
My birthday is coming up, so I wanted to share an amazing recipe with you. My dad actually made this cake for me last year, so it reminds me of him. You’ll be truly amazed that there is NO FLOUR in is cake! Just try it!
Ingredients:
2/3 cup quinoa
1 1/3 cups water
1/3 cup milk (I use almond milk, so pick your favorite)
4 large eggs
1 teaspoon vanilla extract
3/4 cup butter – room temperature
12 Tablespoons raw honey
1 cup raw cacao (cocoa powder will also work)
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt (I prefer Himalayan crystal salt)
Directions:
Put the quinoa and water in a medium pan and bring to a boil. Then cover it and reduce the heat to a simmer for10 minutes. Remove from heat, leaving the lid on and let it sit for 10 more minutes. Then you can fluff it up with a fork, before letting it cool.
Preheat the oven to 350F. Lightly grease two 8-inch pans (round or square), then cover the bottom of each pan with parchment paper.
Combine the milk, eggs, and vanilla in a blender or food processor. Add 2 cups of the cooked quinoa, the butter and the honey and blend until smooth.
Mix together the cacao, baking powder, baking soda and salt in a larger mixing bowl. Add the contents of the blender and mix well.
Divide the batter evenly between your two pans. Bake on the center rack for 40-45 minutes or until a knife put in the center comes out clean.
Cool completely in the pan before serving.
Frost if you’d like. My dad would make coconut whipped topping for ours. Yum!!

OMG! I just made this recipe. I did not expect it to turn out this good. WOW! Recipe makes about 18 cupcakes. Now someone please tell me how to make whipped coconut milk. I have tried in the past and failed miserably. There must be a trick I don’t know.

As for the coconut whipped topping. The easiest thing to do is to get a can of coconut milk. Don’t shake it because it will have separated. You scoop off the white, solid part and discard the water (or drink it! It’s good for you!). You can then just use the white part all by itself, or mix in a little vanilla and perhaps just a touch of powdered sugar (coconut sugar works well if you powder it in your blender/Vitamix).
