How to make a delicious, healthy, summer snack.

Oh, how I love when the days are longer, the air is warmer and the skies are bluer! I don’t know about you, but at this time of year, the last thing I want to do is stand in the kitchen and cook something hot. So, here are a few ideas for easy snacks that are cool, refreshing, and (don’t tell anyone) healthy!

Blueberry Slush – my personal favorite because it takes about 30 seconds to make and is delish!

Ingredients:

Frozen blueberries

Rice or almond milk

Instructions:
Put blueberries in a bowl
Cover with almond milk
Let it sit for about 15 seconds, then begin to stir
It will start to turn slushy!
Enjoy!
Grape DeLite

Ingredients:
Big, red, rinsed grapes
Local honey
Goat cheese
Crushed walnuts

Instructions:
Put a little honey on one plate
Spread the goat cheese on a second plate
Spread the walnuts on a third plate
Take each grape and roll it through the honey, then the goat cheese, then the walnuts.
Pile them onto a plate
Savor each bite!
Berry-licious

Ingredients:
Fresh, organic berries of your choice: blueberries, raspberries and strawberries work well!
Organic orange juice
Vanilla, coconut milk ice cream

Instructions:
Mix your berries together
Slightly mash them with a fork, a mortar or briefly blend in the blender/food processor
Sprinkle in a few tablespoons of orange juice and mix well
Scoop your ice cream into a bowl and cover with the berry mixture
Yummy!
